Looking for an affordable, delicious, and quick dinner idea? Give this a try! It was a hit at our house AND you can get all the ingredients from Trader Joe’s for under $27! Even our 8 month old son had a few bites and loved it! The cauliflower gnocchi cooks so soft it melts in your mouth which was perfect for him to eat!
Ingredients:
2 packs of Spicy Jalapeno Chicken Sausage
2 bags of Cauliflower Gnocchi
1 bunch of Asparagus
1 Yellow Onion
3 Red Peppers
1 container of Cherry Tomatoes
1 container of Pesto Sauce (I used Genova Pesto from TJ)
2 tablespoons of Coconut Oil
- Heat up 2 tablespoons of coconut oil in skillet
- Chop up chicken sausage and cook a few minutes on each side in pan on medium heat
- Add cauliflower pieces and frozen cauliflower gnocchi (do not precook) to skillet
- Add chopped veggies of your choice (I used asparagus, red peppers and onions)
- While veggies are cooking, cut cherry tomatoes in half
- Once veggies are soft, add tomatoes and simmer for a few minutes
- Stir in pesto sauce (I used 1/3 container)
